Researchers from the University of Oxford found a staggering 100-fold increase in the transfer of this bacteria from domesticated chickens to wild birds since 1900. This shift poses significant risks to public health, as Campylobacter is responsible for more gastroenteritis cases in the UK than all other monitored foodborne bacteria combined.
The rapid rise in chicken populations, now at approximately 27 billion globally, has created an environment ripe for bacterial evolution. As chickens increasingly acquire strains from wild birds, they become breeding grounds for new, potentially dangerous pathogens. This evolution is compounded by growing antimicrobial resistance, which threatens the effectiveness of antibiotics used to treat infections in humans.
While cooking can kill pathogens, cross-contamination remains a concern, with bacteria easily transferring to hands and surfaces.
